About this recipe: Mackerel is tossed with garlic, tomato and fresh basil and served on a bed of lettuce. Use smoked mackerel if you prefer.


Serves: 4 

  • 1 (125g) tin mackerel fillets, drained
  • 1 clove garlic, crushed
  • 2 tablespoons tomato purée
  • 1 1/2 tablespoons olive oil
  • handful chopped fresh basil
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 3 plum tomatoes, chopped
  • 1/2 cucumber, peeled and diced
  • 1 small onion, chopped
  • 1 head little gem lettuce

  1. Place mackerel in a mixing bowl and break into small chunks. Mix in garlic, tomato purée and oil. Season with basil, salt and pepper. Stir in tomatoes, cucumber and onion. Serve mixture on a bed of lettuce leaves.
