Yummy turkey roulade with roasted veg and pasta

    A gorgeous dish I discovered when I had some spare turkey left over, so I decided to bash it a bit and roll it up, and tadaaahh it was done :) went down a treat!

    Serves: 2 

    • 1 red pepper, sliced
    • 1 large courgette, sliced
    • 1 beef tomato, cut into 1cm cubes
    • 200g butternut squash, cut into 2cm cubes
    • 1 red onion, peeled and sliced
    • salt and pepper to taste
    • 2 teaspoons dried basil OR 6 leaves fresh basil, torn
    • 1 bunch coriander, chopped
    • 1 tablespoon chives (fresh if possible)
    • 1 tablespoon olive oil
    • 2 turkey steaks
    • 80g cream cheese
    • 120g uncooked pasta, of choice

    1. Preheat the oven to 190 C / Gas 5.
    2. Place the veg in a bowl; add 1/2 the seasoning, 1/2 the herbs and a drizzle of olive oil.
    3. Place the turkey steaks between 2 pieces of cling film, then bash out them with a rolling pin or meat tenderiser, until 5mm thick.
    4. Combine the cream cheese with the rest of the seasoning and spread on the steaks, covering evenly.
    5. Carefully roll the steaks like a Swiss roll, the wrap in tinfoil, taking care to make sure the foil is completely sealed, yet leave room for the air to circulate.
    6. Bake the turkey and veg in the preheated oven for 20 minutes. Remove from the oven, check if the turkey is cooked through.
    7. Meanwhile, bring a large pot of salted water to the boil and cook the pasta until tender with a bite at the centre, about 8 minutes; drain and keep warm.
    8. Check seasoning and serve.


    If you don't have a turkey steak, you could use a chicken breast sliced open instead.
