'Melt in the mouth' peanut butter cookies

    Rich, sweet peanut butter cookie, that just melts in the mouth. Use a fork to flatten these with the traditional criss-cross design.

    Serves: 16 

    • 240g butter, melted
    • 400g caster sugar
    • 2 teaspoons vanilla extract
    • 60ml treacle
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 150g peanut butter
    • 2 eggs
    • 300g plain flour

    1. Preheat the oven to 190 C / Gas 5.
    2. Mix the melted butter with the sugar, vanilla, and treacle, and stir well. Add the baking powder and salt. Mix well again.
    3. Add the peanut butter and mix. Pour in the beaten eggs and stir. Then add the flour, and mix until all the ingredients are thoroughly blended.
    4. Roll the dough into small balls, and place on a baking tray. Flatten slightly.
    5. Bake until the edges just turn golden, 8 to 10 minutes.
    6. Remove from oven, and leave cookies on the tray for 2 minutes before transferring to wire rack to finish cooling.
