    About this recipe: Mashed potato with peas, sweetcorn, carrots and chicken. This is a fun recipe that will make food more enjoyable for kids as it looks like a hedgehog and it's quite colourful - each mouthful tastes different! You could also do it with fish fingers.

    Ingredients
    Makes: 2 good size portions

    • chicken strips
    • potatoes
    • peas and / or sweetcorn
    • carrots, peeled and sliced into sticks

    Method
    Prep:15min  ›  Cook:15min  ›  Ready in:30min 

    1. Cook the chicken strips under the grill (or use the George Foreman® healthy grill).
    2. Peel and boil the potatoes until they are ready to be mashed.
    3. Mix the mashed potato with a handful of peas and / or sweetcorn.
    4. Place the chicken on the plate and put the mash on top and around the sides into a circle so that the chicken is hidden.
    5. Cut the carrot sticks in half and stick them into the potato so that it looks like the spikes of a hedgehog.
    6. Place peas and/or sweetcorn for eyes, nose and mouth.

    Tip

    My son really enjoys this! It's a great way to get kids eating a variety of foods.
