    This is a quick and easy recipe for sausage casserole that I came up with when all we had in the fridge was a pack of sausages, bacon, chorizo and random vegetables. Substitute my ingredients with anything you like!

    Serves: 4 

    • 1 onion
    • 2 peppers
    • 1 fennel bulb (optional)
    • 2 cloves garlic
    • 1 chilli (or to taste)
    • olive oil as needed
    • 4 slices bacon
    • 100g chorizo
    • 1 pack sausages, preferably good quality
    • 2 (400g) tins tomatoes
    • 1 (400g) tin baked beans
    • 1 teaspoon ground coriander
    • 1 large handful chard (or spinach, or any other green leafy vegetable)

    1. Chop up the onion, peppers and fennel, and finely chop the garlic and chilli. Heat a little oil in a large saucepan, then add the chopped vegetables.
    2. Cook for a few minutes, until the vegetables are just starting to soften. Chop the bacon and chorizo into small pieces. Add the sausages, bacon and chorizo to the vegetables and brown.
    3. Once browned, add the tins of tomatoes and the tin of beans. Add the ground coriander. Place a lid on the saucepan and leave to simmer until the sausages are cooked.
    4. Once cooked, add the chard (or whichever vegetable you are using). Once wilted, your casserole is done! Serve with lemony couscous or mash and crusty bread.


    You can literally use anything in this so long as you keep the main ingredients of sausages, tomatoes, beans and onion. Although to be honest you can even substitute the sausages with left over pork, pork chops etc. Anything goes!
