Prawn and Mushroom Noodle Soup

    This recipe was just an invention as I am always thinking of what the boys can have for after work. When you cook on a daily basis, meals can sometimes gets boring or you have a brain freeze and can't think of what to cook! I like experimenting with foods which is how this creation came about. I fancied prawns and the rest followed, now the kids love it.

    Serves: 4 

    • 200g defrosted cooked and peeled prawns
    • 5 chestnut mushrooms, sliced
    • 1 can Heinz mushroom soup
    • 300g medium rice noodles
    • 1 or 2 fish stock cubes
    • 235ml water
    • 1 crushed garlic clove

    1. Fry prawns and mushrooms together in a medium pan.
    2. Add can of mushroom soup and garlic and bring to the boil, adding fish stock and water until it reaches the desired consistency.
    3. Finally add the rice noodles and cook for an additional few minutes. Serve.
