Baked Ham in BBQ Sauce

    My mother passed this recipe onto me when I moved out and into my own home in 1975. Hence the unusual quantities & instructions. It goes great with mixed slow cooked vegetables so I've included that recipe below too.

    Serves: 4 

    • 4 1/4 lb. lean ham joint or gammon
    • To make the BBQ sauce
    • 1/4 onion, chopped
    • 4 tablespoons Heinz Ketchup
    • 2 tablespoons Worcester sauce
    • 4 tablespoons cider vinegar
    • 2 teaspoons butter melted
    • 2 teaspoons pepper
    • 1 teaspoon brown sugar
    • 1 tin Heinz Tomato Soup
    • To make the Mixed Slow Cooked Vegetables
    • 2 rashers of bacon
    • 1 tablespoon butter
    • 1 onion, chopped
    • potatoes, peeled and diced
    • swede, peeled and diced
    • parsnips, peeled and diced
    • 2 carrots, peeled and diced
    • 2 ripe tomatoes, chopped

    1. Boil ham for 1 hour (and a bit). Strain & take off fat.
    2. Mix the sauce ingredients together.
    3. Put ham into casserole dish and pour over sauce, cover and bake for 1 hour at 300F. Baste with the sauce occasionally.
    4. Serve with Mixed Slow Cooked Vegetables: fry 2 rashers of bacon in butter, then add chopped onion, diced potato, swede, parsnip, carrots and tomatoes. Cover and cook on a very low heat. Stir occasionally. Season.

    Next time I would use brown sauce as well as ketchup, passata rather than tomato soup as it was a little too sweet for our taste. But saying that, when the leftovers were cold - the taste was amazing!  -  03 Mar 2015
