About this recipe: This is an easy fried sandwich which is lovely alongside a Spanish tapas plate or Italian antipasti. It's quite rich, so one per person is ample.

Serves: 1 

  • 2 slices fresh bread
  • 4 thin slices chorizo or salami
  • 1 level tablespoon grated Parmesan cheese
  • freshly ground pepper
  • vegetable oil for frying

  1. No need to butter the bread as you are using oil. Lay the chorizo or salami slices on the bread and sprinkle with the Parmesan and pepper.
  2. Top with the other slice of bread (to make a sandwich).
  3. Heat enough oil in a frying pan to shallow fry.
  4. Carefully add the sandwich and fry on both sides until crispy. Carefully remove and drain on absorbent paper.
  5. Cut into squares and serve hot. Can be kept warm in a low oven if you are making batches for a minute or two.
