Prosciutto salad with a nutty vinaigrette

About this recipe: A delicious summer salad of lettuce, prosciutto, walnuts and tofu with an unusual walnut and hazelnut dressing.

Serves: 4 

  • 1 packet lettuce
  • 100g tofu, cubed
  • 75g walnuts
  • 125g prosciutto slices
  • For the vinaigrette
  • 6 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 10g hazelnuts, finely chopped
  • 10g walnuts, finely chopped
  • 1 pinch salt

  1. Place the lettuce on a plate, sprinkle the tofu and the walnuts over the lettuce and top with the prosciutto.
  2. Mix the vinaigrette ingredients well in a bowl and drizzle over the salad.
