Easy Meaty Spanish Rice

    This is a quick recipe that my mum used to make for us. The flavours come together really nicely an can be used for leftovers. Can also be used as a nice stuffing for peppers.

    Serves: 8 

    • 1 medium package (about 450g) minced beef
    • 1 large onion, diced
    • 1 large green pepper, diced
    • 1 can Heinz cream of tomato soup
    • 2 cups (400g) rice

    Prep:5min  ›  Cook:25min  ›  Ready in:30min 

    1. Cook the minced beef, onion, and pepper in a large pan until beef is brown and onions are tender.
    2. Stir in soup and 1 1/2 cans of water (a bit of salt and pepper can be added at this point depending on individual taste). Add rice.
    3. Cook on low-medium heat for 20 minutes (until rice has absorbed the liquid). That's it. Eat and enjoy!


    This can be used as either a main or side-dish. Recipe can easily be adapted for a slow cooker.
