Turkey and Pearl Barley Soup

An easy winter warmer.

Ingredients

1.25L (3 1/4 pints) beef stock
4 potatoes, peeled and cubed
2 carrots, sliced
1 small head white cabbage, shredded
500g (1 1/4 lb) minced turkey
200g (7 oz) pearl barley

Preparation method

1. In a large pot, combine stock, potatoes, carrots and cabbage. Bring to the boil. Lower temperature, and simmer.
2. In a separate saucepan, brown the turkey. Put in pot with other ingredients. Slowly simmer for 1 hour.
3. Add barley for last 15 minutes of cooking time. Serve.

    i made this on boxing day from leftover turkey.......iger bits of meat and just as tasty.......a great way to use up some leftovers ( the carrotts from xmas day that were not used went in too!!)

    This recipe needs flavour! And less barley because it seems to take over the soup! I'll try this again but with more vegetables and less barley. Definetely more spices too.
