Bourbon Glazed Ham

    A sweet, moist and succulent glazed ham recipe that's easy to do. Use a good quality bourbon and 100% apple juice.

    Serves: 8 

    • 1 bone in ham about 4 to 5kg
    • 30 cloves or as required
    • 325g dark brown soft sugar
    • 1 1/2 tablespoons mustard powder
    • 75ml bourbon
    • 750ml apple juice

    1. Remove the ham from the fridge about 2 hours before you want to cook it.
    2. Trim the excess fat from the ham leaving a 5mm layer only. Take a sharp knife and score the ham about 1cm deep and 5cm apart creating diamonds. Stick a clove into the centre of each diamond.
    3. In a small bowl add the sugar, mustard and bourbon, then mix into a paste.
    4. Rub the paste over the whole ham, then lay the ham fat side down in the baking tray. Cover with cling film and leave for 30 minutes.
    5. Preheat the oven to 180 C / Gas 4. Place the oven rack in the bottom third of the oven.
    6. Pour the apple juice into the baking tray so it is about 1cm deep.
    7. Bake the ham uncovered for 2 hours basting occasionally with fresh apple juice to maintain a juice depth of 1cm.
    8. When cooked transfer to a carving board and let rest for 20 minutes before carving.
