Pea and Pancetta Rice

    Egg fried rice with peas and pancetta. Think of this as an easy peasy Italian-inspired fried rice, great for using leftovers.

    Serves: 2 

    • 250g microwave rice
    • 8 tablespoons frozen peas
    • 200g cubed pancetta
    • 1 egg

    Prep:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Place the rice pack and peas into the microwave for 4 minutes (or according to packet instructions).
    2. Heat olive oil in a pan and fry the pancetta.
    3. Add the peas to the pan and then the rice. Fry for a minute or two, and then mix in the whisked egg to create egg fried rice.
    4. Serve as a main or a side dish.


    I sometimes like to add a red onion, or some smoked sausage instead of pancetta.


    A good dish for left over meats, i.e. roast chicken or beef.

    Very simple to make and totally delicious. I made my own rice instead of buying the packet type, purely because it was cheaper that way. Would definitely recommend.  -  05 Aug 2013
