Mum's Chicken Marengo

    I read that Chicken Marengo was made for Napolean after he won the battle of Morengo in 1800. Here is my mum's version of Chicken Marengo, it is so easy to make and I would like to share it with you.

    Serves: 4 

    • 4 chicken joints (skin removed)
    • 1 tin Heinz cream of tomato soup
    • 1 handful chopped herbs (basil and thyme)
    • 1 fresh tomato (diced)
    • 1 clove garlic (chopped)
    • 3-4 shallots (chopped)
    • 1 cup white wine
    • 100g sliced mushrooms
    • 3 tablespoon olive oil
    • 2 tablespoon plain flour
    • Salt and pepper

    Prep:15min  ›  Cook:25min  ›  Ready in:40min 

    1. Sprinkle the chicken joints with salt and pepper. Dredge with flour.
    2. Heat the olive oil in a pan. Brown the chicken on both sides. Drain and set aside.
    3. With the remaining oil the pan, sweat the shallots and garlic. Add in mushroom, herbs, white wine and Heinz tomato soup.
    4. Return the chicken joints into the pan. Bring to the boil. Cover and simmer for 25 minutes until the chicken is tender. Season to taste.
    5. Serve hot with slices of garlic croute bread. Garnished with freshly chopped herbs.

    It was lovely got a 10 out of 10 from my fussy husband who even said he wants it again ... Although I did use chicken soup as that was all I had and I put a small amount of Pastis 51 in it .... thanks for sharing ... Great way to do chicken and all in one pan  -  23 Aug 2017
