About this recipe:I wanted to try this out as a way to jazz up ordinary orange marmalade. It's easy to make as you basically chop everything up in the food processor. It turned out well and is an easy jam to make for Christmas food gifts. One of my friends wants to try adding some freshly grated ginger - might be worth a try.
Makes: 5 jars
750g rhubarb, chopped
2 medium oranges, quartered and seeds removed

Combine rhubarb and sugar in a large heavy saucepan. Chop oranges, including the peels, in a food processor; add to rhubarb mixture. Bring to the boil. Reduce heat and simmer, uncovered, stirring often until marmalade starts to set, usually between 1 and 2 hours.
Pour into clean jam jars that have been sterilised in your dishwasher or oven. Cover securely with tight fitting lids and store in a dark place.
Marvellous recipe. Easy-peasy. I chopped the rhubarb first, then chopped the oranges and then poured over the sugar. Left them in the pot for about a half hour before putting them on the stove. That way the sugar had dissolved into the rhubarb/orange juices and it was easier to stir. - 08 Aug 2014
