About this recipe: This sauce is super easy and can be used for lasagne, bolognaise, meatballs or simply just on it's own with some cooked pasta...its really rich and oh, so delicious! It freezes great too. Enjoy!

Serves: 4 

  • 1 finely chopped onion
  • 3 cloves garlic, grated
  • 175 ml red wine (such as Merlot)
  • 1 tbsp dried basil
  • 1 tbsp dried oregano
  • Half tsp sugar
  • 1 tsp tomato ketchup
  • 1 tbsp tomato puree
  • 3 tins chopped or plum tomatoes
  • 1 tsp Italian mixed herbs
  • Level tsp salt
  • Level tsp ground black pepper
  • 2 tbsp olive oil

Prep:5min  ›  Cook:1hr  ›  Ready in:1hr5min 

  1. Heat oil in a pan. Chop onion, grate garlic; add to pan stirring for 3 mins. Do not allow to colour.
  2. Pour in the wine and simmer till wine has reduced by half before adding the tomatoes, basil, oregano, ketchup, puree, sugar and salt.
  3. Break down the tomatoes with wooden spoon, give everything a good stir, cover and simmer gently for 30 mins. Remove lid and add the mixed herbs and pepper, cover and simmer for a further 15 mins.
  4. Enjoy!


Its a thick rich sauce with tomato and onion so for fussy kids just blend it till its smooth, and don't worry the alcohol in the wine has been cooked out.

Really rich and delicious. Used it for venison meatballs. I left the lid off for the last five or so minutes, but apart from that I didn't change a thing. Glad I had leftovers for the freezer! - 30 Mar 2015
