Vegan Chocolate Mocha Squares

    Coffee, cocoa and tofu bake into rich, delicious dessert squares.

    Serves: 24 

    • 350g (12 oz) silken tofu, undrained
    • 2 tablespoons safflower oil
    • 1 pinch salt
    • 450g (16 oz) demerara sugar
    • 5 tablespoons good quality cocoa powder
    • 5 tablespoons instant decaffeinated coffee
    • 1 teaspoon vanilla extract
    • 100g (4 oz) wholemeal flour

    1. Preheat oven to 160 C / Gas mark 3.
    2. Using an electric mixer, blend tofu until creamy. Add oil, salt, sugar, cocoa, coffee and vanilla and blend well. When sugar is dissolved, remove the bowl from the electric mixer and whisk in flour.
    3. Pour batter into a greased 23x33cm (9x13 in) baking tin.
    4. Bake 25 to 30 minutes, or until the cake pulls away from the sides of the tin. The bars will appear glossy, almost underdone. Cool in the tin and when cool cut into squares using a clean, wet knife.

    Altered ingredient amounts. These are really good! I didn't use the full amount of coffee and they were perfect... I also recomend adding nuts and sultanas to the top!! They can also be cooked a little longer to make firm-  -  24 Jul 2008


    I've made this twice now for friends and they taste very rich and indulgent. No-one could tell that they were made with tofu either. Next time I'm going to add chopped prunes or cherries.  -  14 Apr 2011
