Tomato and basil pasta

    A quick pasta sauce made with tomatoes, fresh basil, garlic, onion and mushrooms. Serve over any type of pasta.

    Serves: 4 

    • 8 mushrooms, sliced
    • 2 onions, sliced
    • 800g chopped tomatoes
    • 100ml vegetable stock
    • 4 teaspoons chopped garlic
    • 1 tablespoon basil
    • 1 tablespoon mixed herbs
    • 1 teaspoon tomato puree
    • pinch salt
    • pinch pepper
    • 500g pasta, any type

    1. Cook the mushrooms and onions in a nonstick pan and pour in the chopped tomatoes. Stir until it begins to boil.
    2. Add stock, garlic, basil, herbs, tomato puree, salt and pepper and stir. Continue to simmer over a low heat.
    3. Meanwhile cook the pasta according to the packet instructions.
    4. Drain the pasta in a colander, mix with sauce and serve.
