Big Yorkshire puddings

    For a hungry person, or to share, just fill this with a hearty mince beef and onion with gravy or a good beef stew. This is my husband's choice of comfort food.

    Makes: 1 Big yorkie

    • 2 heaped tablespoons plain flour
    • 2 large eggs
    • enough milk
    • grinding salt
    • splash cold water
    • ground nut oil as needed

    1. Put flour and eggs into a large jug. Pour in enough milk to make a slightly thicker than emulsion paint consistency and whisk well with an electric mixer.
    2. Add salt to taste and add enough water to make the consistency slightly thinner than emulsion paint.
    3. Leave to stand for at least an hour.
    4. Preheat your oven to 220 C / Gas 7. Put ground nut oil into a 18cm cake tin and let it heat up in the oven.
    5. When the fat in the tin is hot, pour in the mixture (it should sizzle on contact).
    6. Bake for about 30-40 minutes on the middle shelf. Do not open the oven to turn the pudding until a good 20 minutes into cooking time or until you have a good solid rise on the pudding.
    7. Serve with your gravy based dish of choice.
