Baked lamb in tomato with feta

    Found this one online and have tweaked it slightly, went down a treat with my little guy. Will get a picture next time and add it to the recipe.

    Serves: 4 

    • 500g baby new potatoes
    • 1 tablespoon olive oil
    • 1 (400g) tin chopped tomatoes
    • 1/2 tablespoon thyme
    • 1 garlic clove, finely chopped
    • 400g lamb leg steaks
    • 100g feta cheese, cut into small cubes
    • seasonal veg

    Prep:5min  ›  Cook:35min  ›  Ready in:40min 

    1. Preheat the oven to 200 C / Gas 6. Cut potatoes in half length ways and toss in olive oil. Place in ovenproof dish or roasting tin.
    2. Bake for 20 minutes.
    3. Remove from oven and stir in the chopped tomatoes, thyme and garlic.
    4. Once well mixed place lamb steaks on top and place (or crumble) feta over the meat. Return the dish to the oven for 15 minutes.
    5. While this finishes cooking, cook whatever veg you fancy.
    6. Remove from oven, plate up and ENJOY!

    Very tasty and easy. Didn't have Thyme so used Rosemary. Cook longer for really tender meat...  -  03 Jun 2014
