Vanilla cookies with coconut and chocolate

    Plain cookies, dipped into chocolate and coconut or chopped nuts, can also use dark chocolate if preferred.

    Serves: 20 

    • 250g softened butter
    • 140g caster sugar
    • 1 egg yolk
    • 2 teaspoons vanilla extract
    • 300g plain flour
    • 100g milk or dark chocolate
    • dessicated coconut

    1. Place the softened butter and sugar in a bowl and whisk until light and fluffy.
    2. In a separate bowl, place 1 egg yolk - no whites - and the 2 teaspoons of good vanilla extract. Whisk into the butter and sugar mixture.
    3. Add the sifted flour to the mix and mix until a soft dough forms. Use hands to gather mixture.
    4. Place cling film on a board, slightly floured, and place mixture on carefully, making into a sausage shape. Wrap dough and roll. Place in fridge until firm.
    5. Preheat the oven to 180 C / Gas 4. Cut slices from the dough. Place onto a baking tray, leaving room for cookies to spread.
    6. Bake in the preheated oven until golden brown, about 12 minutes.
    7. Place cookies onto a wire cooling rack. In a separate bowl melt 100g of milk or dark chocolate and dip in biscuits on one end then sprinkle with coconut and leave to cool.


    Place into the freezer until hard, as its easier to cut.
