About this recipe:
Little twist on a traditional lemon drizzle cake. This lemon cake is cut up into moreish little squares, perfect for serving afternoon tea.
200g caster sugar
zest of 1 lemon
150g plain flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
For the lemon syrup
130g caster sugar
juice of 1 lemon

Preheat the oven to 180 C / Gas 4.
Mix together butter, 200g caster sugar and lemon zest until mixture is well combined.
Add in eggs, then milk and mix until cake mixture comes together.
Gradually mix in the remaining dry ingredients. Place cake mixture in 25cm square tin.
Bake until a skewer inserted near the centre comes out clean, about 25 minutes.
While cake is in oven, mix together lemon juice and 130g caster sugar for the syrup. No need to boil.
Take cake out of oven after 25 minutes, and spoon sugar syrup over cake.
Place back into oven for another 5 minutes.
Remove cake and cut into squares. Once cooled, squares can be removed and placed on a tray. Tip
Make sure to spoon the syrup mixture over the entire surface area of the cake. The sugar does not need to be dissolved into the lemon juice, it is supposed to be grainy.
Absolutely gorgeous cake, I added some lemon juice to the batter as part of the milk measurement as I wanted it to be extra lemony. Thanks for adding this recipe, I will definitely be making it again

now this has tons of potential. A light, moist, lemony sponge. A cake if made a little drier, a sweet if a bit more liquid. Just refreshing, a real delight. I'll be using it as part of other combos as well. Tx Baje this is one of the best I have found here
