Stifado (Greek beef and onion stew)

    Beef stifado is a popular Greek dish, with a really rich sauce with lots of flavour. Serve with roast potatoes, rice or just some nice crusty bread.

    Serves: 4 

    • 1 small wine glass olive oil
    • 4 whole cloves
    • 1 teaspoon ground nutmeg
    • 1 teaspoon dried rosemary
    • 2 bay leaves
    • 1 cinnamon stick
    • 1kg beef, cut into cubes (preferrably lean)
    • 2 tablespoons tomato puree
    • 2 tomatoes, chopped
    • 500g baby shallot onions
    • 1 wine glass red wine
    • 2 tablespoons vinegar
    • 3 cloves garlic
    • coarse salt and pepper to taste

    1. Heat 1/2 of the olive oil in a large heavy casserole with all the herbs and spices.
    2. Throw in the beef and brown for 5 or so minutes.
    3. Stir in the tomato puree and the chopped tomatoes and let simmer for another 5 minutes.
    4. Shallow fry the onions in the remaining olive oil in a seperate pan until soft.
    5. To the beef, add in the wine, onions and 1 litre of boiling water, and simmer for another 5 minutes.
    6. Finish by placing casserole in the oven for about 45 minutes, or until beef is tender.

    I feel this needs up to an hour longer cooking, and a little less tomato.  -  05 Apr 2017
