Light chocolate cookie cheesecake

    I made this cake when I didn't have many baking ingredients in the cupboard and it turned out lovely. Not rich, but subtley chocolatey and with only 1 spoon of sugar you can feel less guilty. If you like chocolate but don't want something too rich - this is ideal!

    Serves: 8 

    • 150ml double cream whipped
    • 200ml cream cheese
    • 100g milk chocolate
    • 2 drops vanilla extract
    • 2 tbsp cocoa powder
    • 10 digestives, crushed
    • 75g melted butter
    • 1 tbsp caster sugar
    • 1 tbsp milk

    1. Add the melted butter to digestives. Mix and place in a 7cm baking tin.
    2. Melt chocolate then add the cocoa and stir, it will thicken, then add the milk, it will thicken more. Don't worry, thats what you want!
    3. Whip cream till soft peak stage and then mix in the chocolate, sugar, vanilla and cream cheese with a wooden spoon first. Then onto electric whisk to thoroughly will notice some chocolatey bits...thats a good thing! with each mouthful you get smooth and a texture almost of a cookie.
    4. Place mixture on top of base once it has cooled and refrigerate till set...enjoy!
