About this recipe: This one pot dish is so simple and tasty. It's ideal if you want a home cooked meal but dont want to put in the effort!

Serves: 4 

  • 2lb chicken thighs and drumsticks (a mixture)
  • 4 large potatoes, peeled and thickly sliced
  • 4 carrots, sliced
  • 2 onions, thickly sliced
  • 2 cloves garlic, finely sliced
  • 1 tbsp dried thyme
  • 1 tbsp dried rosemary
  • 2 pints chicken stock
  • 1 tbsp cornflour

  1. Preheat oven to 200° c. In a casserole dish, place a layer of chicken followed by a layer of carrot, onion and potato. Sprinkle half the herbs on top, half the garlic and a little salt and pepper, repeat.
  2. Mix the cornflour with a little cold water and pour into the chicken stock. Stir and pour over enough stock to cover. Cook till tender. Enjoy with crusty bread.
