Lemon coconut loaf cake

    I'm a sucker for lemon and coconut so this cake is perfection to me! It's more of a tea cake than a dessert cake.

    Makes: 1 loaf

    • For the cake
    • 120g butter
    • 200g caster sugar
    • 2 tablespoons fresh lemon juice
    • 2 eggs
    • 200g self-raising flour
    • pinch salt
    • 120ml semi-skimmed milk
    • 4 tablespoons dessicated coconut
    • 1 or 2 teaspoons grated lemon peel
    • For the lemon icing
    • 3 tablespoons icing sugar
    • 2 or 3 tablespoons lemon juice
    • Extra dessicated coconut, if you like

    1. Preheat your oven to 180 degrees / gas mark 4. Lightly grease a 900g loaf tin.
    2. In a mixing bowl, cream butter, sugar and lemon juice. Add the eggs, one at a time, beating well after each addition.
    3. Sieve the flour and salt; add to creamed butter mixture alternately with the milk. Stir in the dessicated coconut and grated lemon.
    4. Pour into the loaf tin and bake for 60-70 minutes or until a skewer comes out clean. Cool for 10 minutes in the tin, then remove from the tin onto a wire rack.
    5. Stir the lemon juice into the icing sugar to make a slightly thick (but still runny) icing to and brush over the cake. Sprinkle more coconut over the top, if you like. Let it harden slightly before slicing.

    Would like to have known what size loaf tin to use, also for the icing I think perhaps the recipe should say 3 TSP of lemon juice, NOT 3 TBSP!  -  18 Mar 2012


    Really lovely cake, very easy to make, The only problem that I had was that it say's to mix in the eggs but doesn't say how many? I used 2?  -  12 Feb 2012


    This is a lovely tasting cake, I also added a half teaspoon of baking powder which made it even lighter, very impressed with the result will definitely be baking it again  -  16 May 2012
