I tasted chocolate chilli ice cream a few years ago in Italy and when I saw bars of dark chocolate with chillies at the supermarket I got so excited - I couldn't wait to try and recreate it. Hope you like it as much as I do!
Combine sugar, milk, salt, and cocoa powder in a saucepan over medium heat, stirring constantly. Bring to a simmer.
Add the egg yolks to a large bowl and gradually stir in about 100ml of the hot liquid. Stir quickly, then pour all of this back into the saucepan. Heat until thickened, but do not boil. Remove from the heat, and stir in the chopped chocolate. . Pour into a chilled bowl, and refrigerate for about two hours until cold, stirring occasionally.
When chocolate mixture has completely cooled, stir in the cream. Pour into an ice cream maker, and freeze according to manufacturer's directions.
