About this recipe: Perfect condiment for roast pork, or just on fresh bread and butter. Perfect for people who love sweet and spicy food.

Baje Sofala, Mozambique

Makes: 1 Jar

  • 4 ripe tomatoes, halved
  • 1 large chilli, seeded and chopped
  • 1 tablespoon olive oil
  • 1 garlic clove
  • 1/2 teaspoon sugar
  • 4 tablespoons honey

  1. Toss halved tomatoes, chopped chillies and the olive oil in a bowl.
  2. Remove tomatoes and quickly fry on both sides until a nice "crust" is formed.
  3. While still warm, put back into original bowl with chillies and oilve oil.
  4. Add in garlic and sugar, then blend or process in a food processor.
  5. Put mixture into saucepan and boil for 8-10 minutes until reduced to about half the original amount.
  6. Add in honey and boil for about another 2-3 minutes.
  7. Allow to cool and put in a jar!
