Chicken and veg with noodles

    Chicken breast with fresh ginger and garlic, bean sprouts, red pepper, sweetcorn and other veg, served with noodles.

    Serves: 5 

    • 1 onion
    • 1 red pepper
    • 5 chicken breast fillets
    • 1 vegetable stock cube
    • 1 teaspoon chopped garlic
    • 1 tablespoon grated root ginger
    • pinch salt
    • pinch pepper
    • 200g medium egg noodles
    • 50g beansprouts
    • handful peas
    • handful sweetcorn

    1. Chop onions, pepper and chicken breasts and cook in a pan with water.
    2. Add stock cube, garlic, ginger, salt and pepper and stir until cooked.
    3. Boil the egg noodles in a pan with water for 4 minutes and then put in the other pan.
    4. Add the beansprouts, peas and sweetcorn and keep stirring until heated through.
