Indian basmati rice

    A little change from the traditional white basmati rice! Spices, onion and chicken stock add subtle flavour.

    Serves: 4 

    • oil
    • 3 cardamom pods
    • 1/2 teaspoon cumin seeds
    • 1 cinnamon stick
    • 1 onion, blended
    • 500g basmati rice
    • 1L chicken stock or water

    Prep:5min  ›  Cook:15min  ›  Ready in:20min 

    1. Heat a little oil in a saucepan and turn spices, onions and rice a bit.
    2. Throw in chicken stock or water and cover with pot lid.
    3. Simmer on a low-medium heat for 15 minutes.


    Do not stir rice around or it will go "mushy". To evapourate any additional liquid, at the end, simmer with lid off.

    Other ideas

    Throw in a handful of raisins!
