    Creamy chicken curry with apple and raisins. The fruit turns it a bit sweet-savoury. Serve over rice with warm naan bread.

    Serves: 4 

    • 3 chicken breast fillets
    • 2 teaspoons olive oil
    • 1 onion, chopped
    • 1 apple - peeled, cored and diced
    • 3 tablespoons plain flour
    • 600ml (1pt) chicken stock
    • 120ml double cream
    • 1 handful raisins or sultanas
    • 1/2 teaspoon ground ginger
    • 1/2 teaspoon cayenne pepper
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 2 teaspoons garam masala
    • 1 tablespoon mild curry power

    1. Dice the chicken and fry in the olive oil, about 10 minutes. Once brown, add onion and the apple and cook for a further 10 minutes. Lower the heat to medium.
    2. Add the flour and stir well, ensuring that the chicken, onion and apple are well coated with the flour. Cook for 5 minutes or so.
    3. Turn up the heat to high and cook for 2-3 minutes then add the chicken stock, stirring all the time. Once this has started to thicken, add the cream and then the raisins and the spices. Cook for a further 5-10 minutes to let the sauce thicken up and the flavour of the spices infuse.

    Lovely creamy curry. Very simple to make, no tweaks needed on this one. Only thing I would do next time is double the quantities as not enough to feed my family of four!  -  25 Jun 2013
