Bolo de cenoura (Brazilian carrot cake)

    This carrot cake is as simple as they come - just mix all of the ingredients in the blender, then pour into a tub pan and bake.

    Ingredients
    Serves: 8 

    • 3 medium carrots, peeled and chopped
    • 3 eggs
    • 240ml oil
    • 400g caster sugar
    • 250g plain flour
    • 1 tablespoon baking powder
    • 1 pinch salt

    Method
    Prep:15min  ›  Cook:40min  ›  Ready in:55min 

    1. Preheat oven to 180 C / Gas 4. Grease and flour a 20cm tube cake tin.
    2. In a blender mix together all of the ingredients till smooth, adding the flour gradually.
    3. Pour the cake mixture into cake tin and bake in the preheated oven until a tester comes out clean, 40 minutes. Let cool, remove from tin and serve.
