Coxinha de galinha, also known as Coxinha de frango, is a Brazilian street food, a very popular snack. The original recipe is made with chicken (coxinha de galinha) but it can also be made with other meats, hearts of palm or veggies.

Ingredients
Makes: 50 coxinhas pequenas (tamanho festa) ou 20 grandes
For the dough
500ml water
30g butter
salt to taste
250g plain flour
For the filling
300g cooked chicken
300g ready made white sauce
1 tablespoon minced parsley
1 tablespoon minced green onion
salt and black pepper to taste
For the coating
plain flour
beaten egg
breadcrumbs
vegetable oil for deep frying
Method Prep:1hr › Cook:30min › Ready in:1hr30min
To make the dough:
Bring water, butter and salt to the boil. Once boiling, add the flour at once and stir well until smooth.
Spread dough on a flat surface and let cool. Cut into rounds and reserve.
To make the filling:
Chop or shred the chicken and mix with the white sauce. Add the parsley and green onions and season with salt and pepper to taste.
Put a spoonfull of filling in the centre of each round. Shape each piece into a small drumstick with a large bottom and a pointy top.
Dredge each croquette with flour, dip into beaten egg and coat with breadcrumbs.
Deep fry in very hot oil and drain on kitchen paper.
