Rice fritters


    There's no better use for leftover rice than these tasty rice fritters, a favourite in Brazil. Makes a yummy rice side dish with either meat or vegetarian mains.

    Serves: 20 

    • 120ml milk
    • 2 eggs
    • 1 teaspoon salt
    • 3 tablespoons grated Parmesan cheese
    • 1 tablespoon chopped flat leaf parsley
    • 3 tablespoons plain flour
    • 2 teaspoons baking powder
    • 500g cooked rice
    • vegetable oil for deep frying

    1. In a mixing bowl blend together milk, eggs, salt, grated cheese, parsley, flour and baking powder. Gradually add the rice and stir quickly just to mix.
    2. Heat oil in frying pan over medium high heat. Take spoonfuls of rice mixture and fry in hot oil. Let dry on kitchen paper before serving.
