This is a beautiful Brazilian side dish recipe for rice cooked with a shot of cachaça, Brazil's sugar cane rum.

Ingredients
Makes: 6 porções
3 cloves garlic, chopped
4 bay leaves
50ml olive oil
12 cherry tomatoes, chopped
370g rice
1L hot water
salt to taste
3 tablespoons cachaça (sugar cane rum)

In a large saucepan, sauté the garlic and bay leaves in olive oil. Add the tomatoes and then the rice, stir together. Pour in the hot water, season with salt and cover the pan.
When the rice is halfway ready and the liquid begins to dry, add the cachaça and finish cooking it with the lid on.
