4 (200g) cod fillets
butter for greasing
2 lemons, thinly sliced
3 onions, sliced
1 bunch fresh parsley, chopped
salt and freshly ground black pepper to taste
250ml white wine
6 tablespoons breadcrumbs
45g butter, cut into small pieces
olives for garnish (optional)

Preheat oven to 220 C / Gas 7.
Rinse the cod in running cold water. Dry with kitchen paper and cut into pieces of about 5x5cm. Grease a 20x30cm baking dish with butter and place fish in dish.
Top the cod with lemon and onion slices, then sprinkle with chopped parsley and season with salt and pepper to taste. Drizzle with white wine and sprinkle with breadcrumbs. Finally, distribute butter pieces evenly on top of fish and place olives around fish in baking dish, to taste
Bake in preheated oven for 30 minutes or until fish is cooked through and flaky.
