White wine and lemon baked cod

    Beautiful baked cod dish, ready in 45 minutes from start to finish! Cod fillets topped with lemon, onion, breadcrumbs and parsley drizzled with white wine and baked to a delicate finish for an easy yet elegant baked fish dinner. Serve with grilled asparagus and steamed rice for a gorgeous baked fish dinner.

    Serves: 4 

    • 4 (200g) cod fillets
    • butter for greasing
    • 2 lemons, thinly sliced
    • 3 onions, sliced
    • 1 bunch fresh parsley, chopped
    • salt and freshly ground black pepper to taste
    • 250ml white wine
    • 6 tablespoons breadcrumbs
    • 45g butter, cut into small pieces
    • olives for garnish (optional)

    1. Preheat oven to 220 C / Gas 7.
    2. Rinse the cod in running cold water. Dry with kitchen paper and cut into pieces of about 5x5cm. Grease a 20x30cm baking dish with butter and place fish in dish.
    3. Top the cod with lemon and onion slices, then sprinkle with chopped parsley and season with salt and pepper to taste. Drizzle with white wine and sprinkle with breadcrumbs. Finally, distribute butter pieces evenly on top of fish and place olives around fish in baking dish, to taste
    4. Bake in preheated oven for 30 minutes or until fish is cooked through and flaky.
