Farofa de ovo (Toasted cassava flour with egg)

    Farofa is the typical everyday Brazilian side dish made with toasted farinha de mandioca (manioc or cassava flour). There are many variations - for this farofa de ovo, the toasted cassava (manioc) flour is sautéed with butter and scrambled eggs. Lovely savoury side or breakfast dish.

    Serves: 4 

    • 3 eggs
    • 2 tablespoons cold water
    • salt and ground black pepper to taste
    • 20g butter
    • 1 onion, finely chopped
    • 300g toasted cassava (manioc) flour
    • chopped green olives to taste
    • 1 tablespoon fresh chopped parsley

    1. Beat eggs with water and season with salt and pepper.
    2. In a frying pan, melt the butter and sauté the onion. Add beaten eggs to the pan, stirring with a fork.
    3. When the eggs start to scramble, add the toasted flour and olives and mix well. Finally, stir in parsley; remove from heat and serve.
