Brazilian coconut fish curry

    Fish is cooked in coconut milk and spices like curry powder and achiote seeds (for colour). Achiote (annatto) seeds can be found in Latin American or Caribbean shops.

    Serves: 7 

    • 1kg haddock (or other white fish of your choice)
    • 1 lime, juiced
    • 2 teaspoons curry
    • 1 teaspoon salt
    • ground black pepper to taste
    • 1 teaspoon achiote seeds
    • 1 large onion, chopped
    • 3 garlic cloves, crushed and chopped
    • 1L coconut milk
    • 1 tomato, chopped
    • 1 pepper (any colour), chopped

    1. Season the fish with lime juice and marinate for 5 minutes. Rinse fish quickly and transfer to a saucepan. Season with curry powder, salt, pepper, achiote, onion and garlic; add about one quarter (250ml) of the coconut milk.
    2. Bring to the boil and add the tomatoes, peppers and remaining coconut milk; cook for 15 minutes, stirring occasionally, then remove from heat. Serve hot.
