About this recipe: Fish is cooked in coconut milk and spices like curry powder and achiote seeds (for colour). Achiote (annatto) seeds can be found in Latin American or Caribbean shops.


Serves: 7 

  • 1kg haddock (or other white fish of your choice)
  • 1 lime, juiced
  • 2 teaspoons curry
  • 1 teaspoon salt
  • ground black pepper to taste
  • 1 teaspoon achiote seeds
  • 1 large onion, chopped
  • 3 garlic cloves, crushed and chopped
  • 1L coconut milk
  • 1 tomato, chopped
  • 1 pepper (any colour), chopped

  1. Season the fish with lime juice and marinate for 5 minutes. Rinse fish quickly and transfer to a saucepan. Season with curry powder, salt, pepper, achiote, onion and garlic; add about one quarter (250ml) of the coconut milk.
  2. Bring to the boil and add the tomatoes, peppers and remaining coconut milk; cook for 15 minutes, stirring occasionally, then remove from heat. Serve hot.
