Bacalhau a gomes de sá (Brazilian salt cod with onions and potatoes)

Very traditional Brazilian salt cod dish, pan fried and served with onions, potatoes, hard boiled eggs and green olives.

600g salt cod
240ml olive oil
4 medium onions, sliced
1 teaspoon chopped parsley
3 cloves of garlic, minced
400g potatoes, boiled and sliced
salt to taste
3 hard boiled eggs, peeled and sliced
12 green olives, cut into slivers

The day before, put the salt cod in water to soak, changing the water about 4 times. On the day of preparation, drain and cook the cod in fresh water for 5 minutes. Remove fish from water, remove the bones and shred; set aside.
Preheat oven to 180 C / Gas 4.
Heat the oil in a large saucepan and sauté the onion, parsley and garlic. Add the cod and potatoes. Cook for another 10 minutes until the potatoes start to turn a golden colour and season with salt to taste.
Transfer to a large baking dish and bake in preheated oven for 10 to 15 minutes. Remove and garnish with sliced eggs and olives.
