About this recipe: Very traditional Brazilian salt cod dish, pan fried and served with onions, potatoes, hard boiled eggs and green olives.


Serves: 4 

  • 600g salt cod
  • 240ml olive oil
  • 4 medium onions, sliced
  • 1 teaspoon chopped parsley
  • 3 cloves of garlic, minced
  • 400g potatoes, boiled and sliced
  • salt to taste
  • 3 hard boiled eggs, peeled and sliced
  • 12 green olives, cut into slivers

  1. The day before, put the salt cod in water to soak, changing the water about 4 times. On the day of preparation, drain and cook the cod in fresh water for 5 minutes. Remove fish from water, remove the bones and shred; set aside.
  2. Preheat oven to 180 C / Gas 4.
  3. Heat the oil in a large saucepan and sauté the onion, parsley and garlic. Add the cod and potatoes. Cook for another 10 minutes until the potatoes start to turn a golden colour and season with salt to taste.
  4. Transfer to a large baking dish and bake in preheated oven for 10 to 15 minutes. Remove and garnish with sliced eggs and olives.
