Quentão is a Brazilian version of a mulled wine or a spiced rum, made with cachaça (Brazilian sugar cane rum), ginger, sugar and citrus fruits.

- 300g caster sugar
- 375ml water
- 4 tablespoons slivered root ginger
- 2 limes, sliced
- 1 orange slice
- 2 cinnamon sticks
- 4 whole cloves
- 1L good quality cachaça

- Heat sugar and water in a large saucepan over medium heat until sugar dissolves.
- Add the ginger, limes, oranges, cinnamon and cloves; simmer over low heat for 15 to 20 minutes, allowing flavours to infuse.
- Remove from heat, add the cachaça and return to heat. Bring to the boil and let boil for a few seconds, then remove from heat.
- Serve warm.
