About this recipe:
Rice made in the microwave makes for a much easier clean up! This version has chopped onion included which adds a nice flavour.
1 teaspoon salt, or to taste
1 tablespoon butter or olive oil
1 tablespoon chopped onion

- Place all ingredients in a microwave safe container that has a lid. Stir well, leave the lid on but allow a little space for steam to escape. Microwave on high for 7 minutes.
- Change the microwave setting to medium; cook for another 5 minutes.
- Remove from microwave, fluff with a fork; cover the container and set aside to rest for 10 minutes.
- Remove and fluff again before serving.
