    About this recipe: Salpicão is very popular in Brazil, a creamy salad (normally mayonnaise based) with chicken, lots of veg and fruits. It's great for using leftover chicken and can be enjoyed with a green salad or with crusty bread.

    Ingredients
    Serves: 15 

    • Dressing
    • 125ml double cream
    • 170g mayonnaise
    • 1 tablespoon chopped fresh parsley
    • 1 tablespoon chopped spring onions
    • salt and pepper to taste
    • Salad
    • 1 chicken breast fillet, cooked and shredded
    • 1 tin sweetcorn, drained
    • 1 tin garden peas, drained
    • 1 green apple - peeled, cored and chopped
    • 2 carrots, grated
    • 80g raisins
    • salt and black pepper to taste

    Method

    1. To make the dressing, mix cream with mayonnaise, parsley and spring onion and season with salt and pepper to taste.
    2. In a bowl combine all of the salad ingredients; toss with dressing and check the seasoning. Serve.
