Chocolate mince pie squares

    This biscuit traybake combines plain chocolate and your favourite mincemeat, baking them into moreish little squares.

    Makes: 3 dozen squares

    • 110g butter or margarine
    • 200g sugar
    • 3 eggs
    • 250g plain flour
    • 2 teaspoons bicarbonate of soda
    • 500g mincemeat
    • 340g plain chocolate, chopped
    • icing sugar to garnish

    1. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine flour and bicarb; gradually add to the creamed mixture and mix well. Beat in mincemeat. Stir in chopped chocolate.
    2. Spread into a greased swiss roll tin. Bake at 190 C / Gas 5 for 20-25 minutes or until golden brown. Cool on a wire rack. Dust with icing sugar and cut into squares.

    The chocolate mince pie squares overflowed onto the oven floor despite using a large Swiss roll tin and took 45 minutes to bake by which time it was burnt, though I had covered it in foil after the first 20 minutes. This recipe did not work and was a waste of time and ingredients!  -  18 Dec 2012
