Oven roasted parsnips

    The trick to flavourful roasted parsnips is to par boil them until half-cooked, then roast them in a hot oven with butter and stock. The stock evaporates and gives the parsnips a delicious buttery finish.

    Serves: 4 

    • 450g parsnips, peeled and quartered
    • 100ml stock (lamb or chicken)
    • salt and pepper
    • 2 tablespoons butter

    1. Preheat the oven to 180 degrees C / gas mark 4.
    2. Boil the parsnips for 10 - 15 minutes, then drain and arrange in a baking dish.
    3. Pour over the stock, season with salt and pepper and dot with butter.
    4. Bake for 20 - 30 minutes until they are golden brown.


    You can also add a pinch of nutmeg before you roast the parsnips.
