Flourless simple coffee cake

    This is a simple and tasty low carb coffee cake recipe with almond flour (ground almonds) that can be adjusted to your taste. Suitable for low carb diets, diabetes (if cooked with sugar substitute) and anyone who wants to try something different.

    • 225g almond flour
    • 120ml boiling water
    • 6 to 7 teaspoons instant coffee
    • 125g unsalted butter
    • 200g sugar (or equivalent sugar substitute)
    • 2 eggs
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon cream of tartar
    • 1/2 teaspoon vanilla essence

    1. Preheat the oven to 180 C / gas mark 4. Grease a 20cm round cake tin.
    2. Mix all dry ingredients in a bowl and set aside.
    3. Beat eggs in another bowl and set aside.
    4. Dissolve instant coffee granules in boiled water and add it to the eggs.
    5. Melt butter and add it to the liquid mixture. Then add vanilla essence and stir well.
    6. Pour liquid mixture into dry ingredients and mix well until smooth.
    7. Pour the mixture into the prepared tin. Bake for 40 minutes or until a knife inserted comes out clean.
    8. Let the cake cool and enjoy!


    You can adjust ingredients to your taste. Leave enough time to cool, cake may stick to the tin.
