Easy oat cookies (no eggs)

    This recipe has been handed down to me from my Nana. These are really quick and easy to make and are great for unexpected visits from friends when you have no biscuits to give out with the coffee! Or if, like me, you only have a few ingredients left in the cupboard at the end of the month!

    Makes: 20 cookies

    • 170g (6oz) margarine or butter
    • 115g (4oz) caster sugar
    • 1 teaspoon vanilla extract
    • 225g (8oz) self-raising flour
    • 57g (2oz) rolled oats

    Prep:15min  ›  Cook:15min  ›  Extra time:20min cooling  ›  Ready in:50min 

    1. Preheat the oven to 180 C / Gas 4.
    2. Cream together the margarine and sugar until light and fluffy. Add vanilla essence, and sieve in self raising flour.
    3. Mix in 1 oz of the oats.
    4. Knead mixture together and then roll into small balls. Then roll balls in remaining oats and press down on a greased baking tray.
    5. Bake in the oven until golden brown, about 15 minutes.


    I have experimented a lot with this recipe. I have substituted the oats with crushed cornflakes and crunchy nut cornflakes which is nice and recently have substituted oats with flavoured versions of Oat So Simple® sachets (2 into the mixture and miss out rolling in oats part) All work really well! Hope you enjoy making these like I do !

    Thanks to you and your nan for this recipe. The biscuits were easy to make and tasted great. I was looking for a quick and easy recipe because I was expecting guests and had very little in the cupboard in the way of baking stuff, and this fitted the bill perfectly.  -  27 May 2012
