Honeyed balsamic chicken and roasted root veg

    Simple and tasty supper, will wow your friends and family. This also works well with pork chops, especially if you include a chopped apple or pear with the roast veg! Great for using up any veg you have left over.

    Serves: 4 

    • 4 carrots
    • 4 parsnips or 1 swede
    • 4 shallots or 2 onions
    • 2 tablespoons oil
    • 3 tablespoons honey
    • 2 teaspoons balsamic vinegar
    • 2 tablespoons orange juice or 1 orange (optional)
    • 4 chicken breast fillets

    1. Preheat the oven 220 C / Gas 7.
    2. Chop veg into big chunks, and toss in the oil. Season with salt and pepper and roast for 30 minutes.
    3. Whilst veg is roasting, mix the honey, balsamic and orange juice, and marinate the chicken. Once the veg has been in the oven 30 minutes, remove the chicken from the marinade, and add the marinade to the veg and toss. Return the veg to the oven for 5 minutes.
    4. Fry the chicken breasts. Slice and serve with the roasted veg.
