Tomato and goat's cheese toasties

    Tasty and light summer starter or lunch. Serve sliced with a salad on the side for a complete and simple meal.

    Serves: 2 

    • 1 medium loaf ciabatta bread
    • 1 to 2 tablespoons pesto
    • 2 to 3 tomatoes, sliced
    • 1 red onion, cut into small wedges
    • 3 to 4 tablespoons sheep or goat's cheese
    • salt and ground black pepper, to taste
    • 1 pinch granulated sugar or caster sugar
    • drizzle olive oil
    • 4 to 6 torn basil leaves

    1. Preheat the oven to 220 C / Gas 7.
    2. Cut the ciabatta in half lengthways and place the cut side up under a medium grill for a few minutes. Remove from the heat and spread the base with pesto then add the remaining ingredients on top, except the basil, ending with a drizzle of olive oil. Place the ciabatta lid on top and place on a baking tray.
    3. Bake in the preheated oven for 20 to 25 minutes until golden brown and the inside is warm. Remove from the oven, garnish with basil and serve.
