About this recipe: Sausage casserole that my mum makes, and it is the bee's knees!!! Sausage and streaky bacon simmer on the hob with mushrooms and onions.

Serves: 4 

  • 450g good quality sausages
  • 225g streaky bacon
  • 225g button onions or shallots
  • 1 heaped teaspoon plain flour
  • 275ml red wine
  • 1 garlic clove, crushed
  • 1 bay leaf
  • 1/2 teaspoon dried thyme
  • 175g button mushrooms

  1. Heat a little oil in the casserole dish and brown the sausages all over. Then using a slotted spoon, remove them to a plate. Add the bacon and onions to the casserole and brown lightly, sprinkle in the flour to soak up the juices and gradually stir in the wine.
  2. Pop the sausages back in with the garlic, bay leaf, thyme and a little seasoning. Put the lid on and simmer on the hob very gently for 30 minutes.
  3. Next add the mushrooms, stirring them in and cook for a further 20 minutes without the lid this time.
