Mix the curry powder to taste with the mayonnaise, and add the flaked almonds and chopped apricots mixing thoroughly.
Stir in the chopped chicken breast, then leave for the flavours to develop, about 30 minutes or until needed.
This can be made well in advance and kept in the fridge until needed. It is also ideal for a buffet style party just put a bowlfull on the table with the other foods and people will tuck in. You can also add pine nuts and/or raisins for extra or different flavours.
